NOW RECRUITING PARTICIPANTS FOR A VEGETARIAN STUDY

We are looking for participants to enroll in the feeding study described below. The feeding schedule will begin September 16, 2007 and be in three phases. Phase 1 will be from September 16, 2007 to November 16, 2007 (8 weeks plus a 1 week run-in). Phase 2 will be from January 6, 2008 to February 29, 2008 (8 weeks) and Phase 3 will be from March 23, 2008 to May 16, 2008 (8 weeks). All study members must participate in all three feeding phases. Supper will be served at Loma Linda University in the Nutrition Department kitchen Sunday through Friday. Daily breakfasts and lunches and all of the Saturday meals will be packed "to go". During the three feeding phases all participants must eat only the food provided by the study kitchen and each participant will be asked to keep a diary to record any deviation from the prescribed diet. The washout phases between feeding phases will be virtually free of dietary restrictions.

What to expect after you have applied

Comparing different types of omega-3 fatty acids
on selected coronary heart disease risk factors in healthy adults

Regular consumption of omega-3 fatty acids from both marine and plant sources has been shown to produce significant heart heatlh benefits in persons with normal blood lipids and and those with high levels of blood lipids. This study will compare the effects of a plant omega-3 enriched diet versus a marine omega-3 enriched diet on blood lipids and other selected heart disease risk factors in healthy adults and, for the first time, look at the possible effect of combining plant and marine omega-3 sources in the diet.

The study will be a carefully controlled feeding study over the course of 25 weeks in three 8-week diet phases (plus an initial 1 week run-in). All participants will consume a typical lacto-ovo vegetarian diet for one week. This will be followed by assignment to one of three groups, each of which will consume an eight week diet on a lacto-ovo vegetarian diet, a lacto-ovo vegetarian diet including flaxseed oil or walnuts and a lacto-ovo vegetarian diet including a marine omega-3 supplement.
